Green Chili Stew

I love homemade green chili...well my husband does not.  So I came up with this to disguise my chili, ha ha ha. Same great taste, but a dinner we ALL can enjoy!

  • 1 TBSP olive oil
  • 2 lbs diced pork
  • 1 onion, chopped
  • 1 (10 oz) can diced tomatoes
  • 4 cups chicken broth
  • 2 cups diced green chilies (I buy a bag of roasted chili's.  Peel them and freeze them.  They make the best chili.  Or you can buy frozen bags of pueblo chili or containers at most grocery stores.)
  • 2 cloves of garlic, minced
  • 1 TBS garlic salt
  • 1 tsp ground cumin
  • 1/2 tsp pepper
  • 3 large potatoes, peeled and cubed
  • 1 cup quick barley
In a large skillet heat oil.  Add pork, onions, garlic and garlic salt. Cook over medium heat until meat is done. Place in a crock pot.  Add remaining ingredients.  Cook on low 4-6 hours.  Serve with warm tortillas.

Crock Pot Chicken Cordon Bleu

This was so simple yet very delicious!!
  • 6 skinless, boneless chicken breasts
  • 1 (10.75 oz) can cream of chicken soup
  • 1 cup milk
  • 6 slices of ham (use leftoever ham if you have it)
  • 6 slices Swiss cheese
  • 1 (8 oz) package herbed dry bread stuffing mix
  • 1/4 cup butter, melted
  • Perfect Chicken seasoning
Mix together the cream of chicken soup and milk in a small bowl.  Pour enough of the soup into a crock pot to cover bottom.  Layer chicken breasts over the sauce.  Sprinkle with seasoning.  Cover each chicken breasts with a slice of ham and cheese.  Pour the remaining soup over.  Sprinkle the stuffing on top and drizzle butter over stuffing.  Cover and cook on low for 4-5 hours.

Tomato, Garlic & Basil Chicken Alfredo

Made this one up one night using leftover chicken...delightful!
  • 4 chicken breasts
  • Grill Mates Tomato, Garlic & Basil Marinade Package
  • 2 TBS butter
  • 1/4 cup flour
  • 1/2 tsp garlic
  • 1/2 tsp salt
  • 4 oz cream cheese
  • 1/4 cup Parmesan cheese
  • 1 cup milk
  • Noodles (linguine, fettuccine, wide egg noodles...), cooked and drained
Place chicken in crock pot.  Mix marinade package according to directions. Pour over chicken and cook on low for 4 hours.  Dice up chicken.  Melt butter in a medium sauce pan.  Whisk in flour garlic and salt.  Gradually add milk.  Whisk in cream cheese, and Parmesan cheese.  Cook, stirring constantly, until thick and bubbly.  Add diced chicken and juices. Cook over low for 5 minutes.  Serve over hot, cooked noodles. 

If you make the Tomato, Garlic & Basil Chicken before, just use the leftovers and add to the Alfredo sauce...from leftover to gourmet!

Tomato, Garlic & Basil Chicken


This is simply wonderful!
  • 4 chicken breasts
  • 1 Grill Mates Tomato, Garlic & Basil Marinate packages
Place chicken in crock pot.  Mix Grill Mates package according to directions and pour over chicken.  Stir chicken around making sure evenly coated.  Cook on low for 4-5 hours. 

I added a few more chicken breasts and cut them up with all the extra juices and stored in the fridge for another great meal...from leftover to gourmet!

Creamy Steak Over Rice

We get a lot of round steak and so I'm always trying to make meals with it.  This one was a success!
  • 1 lb. round steak
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 1 TBS olive oil
  • 1 can (14.5 oz) petite diced tomatoes
  • 2 cups beef broth
  • 2 TBS paprika
  • Steak Seasoning
  • 1 (8 oz) container sour cream
  • 2 cups Rice
  • shredded cheese
Trim any fat off the round steak.  Rub generously with steak seasoning and put in crock pot.  In a skillet, saute onions, bell pepper, and paprika until onions are lightly brown.  Pour over steak.  Pour tomatoes over onions.  Add  broth to skillet and boil for a few minutes, then pour over everything.  Cover and cook on low for 6 hours.  Take steak out and dice.  Mix sour cream in crock pot, then put meat back in; cover and cook 20-30 minutes.  Serve over cooked rice; sprinkle with cheese.

I double my rice so I can use it for another quick meal...from leftover to gourmet!

Crock Pot Stroganoff

Yummy!
  • 1 lb round steak
  • garlic salt
  • 1/4 cup flour
  • 1 can cream of mushroom soup
  • 1 cup Beef broth
  • 1 can diced tomatoes
  • 1 (8oz) container sour cream
  • Wide egg noodles
Rub round steak with garlic salt and place in a lightly greased crock pot.  Mix flour with broth then add in soup and tomatoes.  Pour over steak and cook on low 6-8 hours.  Chunk meat with two forks.  Whisk in sour cream.  Serve over cooked wide egg noodles. 

If you have made the slow cooker steak dinner, place the meat and gravy (pick out any potatoes or carrots) in crock pot.  Cook on low until hot, about 2 hours.  Add sour cream and serve over cooked noodles.

Slow Cooker Steak Dinner

Great all in one meal!
  • 2 lbs round steak
  • 1 tsp garlic salt
  • 1/2 tsp pepper
  • 1/4 cup Worcestershire sauce
  • 4 potatoes, large cubes
  • 1 cup baby carrots
  • 1 onion, sliced
  • 1 can fire roasted tomatoes
  • 1 can mushroom soup
  • 1 cup beef broth
  • 2 TBSP corn starch
Rub round steak with Wprcestershire sauce, salt and pepper.  Place in lightly greased crock pot.  Place potatoes, carrots, and onions on top.  In a bowl, mix tomatoes, soup, broth and corn starch.  Pour over everything.  Cook on low 7-8 hours. 

I make extra so I can use the meat and gravy for stroganoff...from leftover to gourmet!

Ground Beef and Rice


Nice crock pot meal!
  • 1 1/2 lbs ground beef
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1/2 cup rice
  • 2 1/2 cups water
  • 2 TBSP soy sauce
  • 1/2 cup onion, diced
  • canned French-fried onions
Brown the ground beef and onion in a skillet; drain well.  Place in crock pot.  Mix in uncooked rice (not minute rice),  soups, water, & soy sauce.  Top with the french-fried onions.  Cover and cook on low for 4-6 hours until rice is done. 

I like to cook extra ground beef and store in the freezer for a quick meal in the future...from leftover to gourmet!

Chicken Enchilada Tostada

This turned out very yummy and my children even ate it!

  • 4 chicken breasts, cubed
  • 1/4 cup taco seasoning, or one pkg
  • 1/2 cup diced onion
  • 1 (10 oz) can red enchilada sauce
  • 1 can diced tomatoes
  • 1 1/2 cup shredded Mexican cheese
  • 6 corn tortillas, or tostada shells
  • lettuce
  • tomato
  • onion
  • cheese
  • sour cream
In a crock pot, add chicken, taco seasoning, onion, enchilada sauce, tomatoes, and cheese.  Cook on low 6-8 hours.  Fry corn tortillas until crispy and drain.  Smother shell with chicken and sauce.  Garnish with lettuce, tomato, onion, cheese, & sour cream.

Make plenty of chicken sauce because you will use for another meal...from leftover to gourmet!

Pulled Pork

I love this pulled pork because you can add barbecue sauce for sandwiches or add beans and put it in a tortilla for burritos or just simply eat it as is...wonerful!
  • 1 (4 lb) pork roast or tenderloin
  • 1 onion, chopped
  • 1 TBSP garlic
  • 1TBSP olive oil
  • 1 cup chicken broth
  • 1/2 cup Worcestershire sauce
  • 1 tsp ground cumin
  • Cajun seasoning
  • whole green chilies
  • Buns or Rolls, optional:)
Turn crock pot on high and saute onion & garlic in the oil 2-3 min.  Rub Cajun seasoning all over your pork then place in crock pot.  Mix chicken broth, Worcestershire sauce and cumin and pour over roast.  Place chilies on top of pork, add more Cajun if you like, then turn crock pot to low and cook 6-8 hours.  Shred meat in juices and serve with BBQ sauce or on rolls or hamburger buns with BBQ sauce.

Pork Chimichangas

What a great way to use that leftover shredded pork!

  • Pulled Pork (use leftover or see recipe)
  • 1 can of Corn, drained
  • 1 can of black beans, drained & rinsed
  • 1 can green chilies
  • Potatoes, diced & fried (use leftover if you have them)
  • Large flour tortillas
  • Shredded cheese
Heat pork with corn, black beans, & chilies. Divide evenly between the flour tortillas & sprinkle with cheese.  Wrap, with ends folded in, and place on baking sheet.  Brush lightly with olive oil.  Bake at 400 degrees for 18-20 min, or until golden brown.  Serve with sour cream, salsa, & or guacamole... or simply eat plain.

I make some Sara's Salsa and add half to my pork, instead of the cans, and eat the other with chips as a side to this meal!

Chicken over Noodles

A great crock pot meal!

  • 4 chicken breasts
  • 1 pkg. Italian seasoning
  • 1 can mushroom soup
  • 16 oz cream cheese
  • Wide egg noodles
Place chicken in bottom of crock pot and sprinkle Italian seasoning over. De-bone if needed and shred chicken. Cook on low 6-8 hours.  Melt soup and cream cheese over low heat.  Add to chicken and heat for 1/2 hour.  Boil your noodles.  Serve chicken over noodles.

Roat Beef with Gravy

This is a great meal that takes no time. I love to walk in after a busy day of work and have my house smell like someones been slaving over the stove all day!

  • 4 lb Beef Sirloin Tip Roast
  • 2 garlic cloves, minced
  • salt
  • 1/4 cup flour
  • 1 envelope onion soup mix
  • 1 envelope brown gravy mix
  • 2 cups cold water
Rub roast with garlic and salt and place in crock pot.  Mix soup, gravy, flour and water.  Pour over and around roast.  Cover and cook on low for 6-8 hours.  Slice roast and stir gravy good. Serve with mashed potatoes.

Note: Save leftover roast to make another great meal...from leftover to gourmet!
