Grandma Faucettes Coconut Cake

This is the best cake in the whole world!  Everyone who has had a piece of my grandmas famous cake wants the recipe...enjoy.

  • 1 cup oatmeal
  • 1 cube butter
  • 2 cups boiling water
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs, beaten
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 1/2 cups flour
Mix oatmeal, butter and water in mixer and let stand 10 min.  In a large bowl mix brown sugar, white sugar, eggs, soda, cinnamon, salt & flour.  Add to oatmeal mixture and beat well.  Pour into 9x13 in sprayed cake pan and bake at 350 degrees for 20-25 min, or until done. 

Topping
  • 1 cube butter
  • 1/2 cup cream
  • 1/2 cup brown sugar
  • 1 tsp vanilla
  • 1 cup coconut
  • 1 cup nuts
Melt butter in large sauce pan over med heat.  Add cream and sugar; continue cooking until bubbly.  Add coconut, nuts & vanilla.  Pour over warm cake.  (Sometimes I add more cream, coconut and nuts because I like a thick frosting)
