Homemade Rolls

There is nothing better than homemade rolls fresh out of the oven!  I'm so greatful my mother-in-law took the time to teach me how to make these wonderful things!


  • 1 cup boiling water
  • 3/4 cup instant mashed potato flakes
  • 1 tsp salt
  • 1/2 cup sugar
  • 1/2 cup dry powdered milk
  • 1/2 cup margarin
  • 3 eggs
  • 1/2 cup warm water
  • 2 TBS yeast
  • 5 cups flour
Mix first 5 ingredients.  Add margarine and eggs; mix well.  Mix yeast in the 1/2 cup warm water and set aside for 3 min.  Add to mixture and mix well.  Add 3 cups flour, one at a time, beating well.  Then if you have a dough hook I put it on, then add 2 cups of flour to make soft dough.  Knead about 20 times.  Place back in bowl and cover with plastic.  Let rise, about an hour.  Punch down and shape into rolls.  Let rise about 10 min and then bake at 350 degrees for 18-25 min, until golden brown.
