- 4-5 chicken breasts, cooked and chopped
- 2 cans cream of chicken soup
- 1 (12 oz) sour cream
- 1 box Stove Top stuffing (I buy a few of these when they go on sale! Usually around Thanksgiving you can find coupons and they usually have great sales on them. They are good to have on hand to make quick meals.)

Taco Salad
- 1 lb ground beef
- 1 head of iceberg lettuce, chopped
- 1/2 Romain lettuce, chopped
- 2 tomatoes
- 1 can corn, drained
- 1 can black beans, rinsed and drained
- 1 small can olives, drained
- 1 small onion, diced
- 2 cups grated cheese
- tortilla chips
- sour cream
- salsa
I make half this for our family, because it's not very good leftover. I store the other half of corn and black beans in the fridge for another meal. I also cook double the hamburger now and store the other half for another meal. Taco soup is a great second meal to use leftovers...from leftover to gourmet!
Taco Soup
- 1 lb hamburger
- 1 can pinto beans
- 1 can corn
- 1 can green chilies
- 1 package taco seasoning
- 1 can diced tomatoes
- 2 TBS four
- cheese
- sour cream
- tortilla chips
I always make this when I have leftover corn, green chilies or tomatoes in the fridge. I've also thrown in black beans if we have them leftover from taco salad and it's yummy too!
Watermelon Smoothie
A family favorite, around our house, are smoothies. I had a bunch of watermelon leftover from a party, so I decided to make a smoothie with it and leftover sherbet...it was amazing!
- 6 cups chopped seedless watermelon
- 2 cups sherbet (I used tropical)
- 1 cup ice
- 1/8 cup sugar
Crock Pot Stroganoff
Yummy!
If you have made the slow cooker steak dinner, place the meat and gravy (pick out any potatoes or carrots) in crock pot. Cook on low until hot, about 2 hours. Add sour cream and serve over cooked noodles.

- 1 (8oz) container sour cream
- Wide egg noodles

Slow Cooker Steak Dinner
Great all in one meal!
I make extra so I can use the meat and gravy for stroganoff...from leftover to gourmet!
- 2 lbs round steak
- 1 tsp garlic salt
- 1/2 tsp pepper
- 1/4 cup Worcestershire sauce
- 4 potatoes, large cubes
- 1 cup baby carrots
- 1 onion, sliced
- 1 can fire roasted tomatoes
- 1 can mushroom soup
- 1 cup beef broth
- 2 TBSP corn starch

Yellow Cake
- 2 1/2 cups flour
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 2/3 cup butter
- 1 3/4 cup sugar
- 1 1/2 tsp vanilla
- 2 eggs
- 1 1/4 cup milk
In a large mixing bowl beat butter and sugar until creamy. Add vanilla. Add eggs, one at a time, beating 1 min. after each. Combine flour, baking powder, and salt in a separate bowl. Add dry mixture and milk alternately to sugar mixture. Pour batter into prepared cup cake pan. Bake at 375 degrees for 15 min or until done.
- 1 box chocolate jello
Make jello according to directions. Once cupcakes are cool, pipe jello into middle of cupcake. Move tip around in middle creating a hole for pudding to fill. Frost cupcakes.
Chocolate Buttercream Frosting
- 1 cup butter, softened
- 3 1/2 cups confectioners sugar
- 1/2 cup cocoa powder
- 2 tsp vanilla
- 4 TBSP milk
Cream butter with mixer. Add 3 cups sugar and cocoa and beat on low. Add vanilla, milk, and more sugar if needed to make it a stiff frosting.
