- Mashed Potatoes (Use leftovers if you have them!)
- 1 lb ground beef
- 1 (4 oz) can green chilies
- 1 (15 oz) can of corn, drained
- onion, diced
- 1 garlic cloves, minced
- salt & pepper
- shredded cheese
Preheat oven to 375 degrees. In a large skillet fry ground beef with onions, garlic, salt and pepper. Drain off fat then add chilies and corn. Spread meat mixture in bottom of a 2 quart casserole dish. Spread mashed potatoes on top and sprinkle cheese on top.
