Chicken Enchilada Nachos

This is basically the same as the tostadas, just different form.

  • 4 chicken breasts, cubed
  • 1/4 cup taco seasoning, or one pkg
  • 1/2 cup diced onion
  • 1 (10 oz) can red enchilada sauce
  • 1 can diced tomatoes
  • 1 1/2 cup shredded Mexican cheese
  • bag of corn chips
  • sour cream
  • olives
In a crock pot, add chicken, taco seasoning, onion, enchilada sauce, tomatoes, and cheese. Cook on low 6-8 hours.  Place chips on baking sheet and sprinkle with chicken mixture.  Top with shredded cheese and place in 350 degree oven for about 15 min or until cheese is melted.  Garnish with olives and sour cream.
